Easy Green Lentil soup with Garlic Toasts

Hi Everyone,

I know that this month is dedicated to cruelty-free beauty but this recipe is so tasty and easy that I needed to share it with you.

You will need:

  • A pack of brown lentils
  • Mushrooms
  • Red onions
  • Tomatoes
  • Whole wheat bread or an old baguette
  • Olive oil
  • Spices of your choice (I added chili, soy sauce & pepper)
  • Garlic
  • Olives (optional, I just love them)

In a large pan, bring your water to a boil. Add a spoonful of olive oil and your lentils.


In my experience, brown lentils tend to take a little more time to cook than red lentils for example. Once my lentils are half-way there, I add my chopped mushrooms (an entire pack) and two sliced red onions.


I usually cover the pan for the last 10 mins of cooking and get my toasts ready.

If you have a clove of garlic, chop it, mix it with a spoonful of olive oil, salt&pepper and spread it on a piece of your baguette (or sliced bread). Put your slices in the oven until they look crispy.

When they are ready, take your slices out and add on your toppings. I went for tomatoes, olives, and red onions as they are some of my favorite.


This recipe is a good vegetarian twist on my parents signature dishes. Easy to do and packed with veggies. If you don’t have an oven, a waffle maker, a toaster and garlic powder will do just fine.
